Parmigiano Reggiano

PARMIGIANO REGGIANO is a hard type of cheese that is produced with milk from cows (fed with locally grown fodder), rennet and a lot of skill and passion. The local consortium has created a European Community approved label which identifies the locally made Parmigiano Reggiano as a “Mountain Product”, thus strengthening the link between this type of cheese and its geographical origin. The local Parmigiano Reggiano factory is located in Rosola, near Zocca, where the processed milk comes from Bianca Modenese breed, which special milk favours cheese processing and enhances its final flavour.
