CRESCENTINA (sometimes called TIGELLA)

CRESCENTINA (sometimes called TIGELLA) is an ancient type of bread from the local mountains made with a mixture of flour, water and salt. The dough is then shaped into small discs that are cooked with a typical stone tool called “tigella”, which is sometimes the name wrongly given to crescentina, as well. Crescentina is usually filled with tasty “cunza” (beaten lard flavoured with garlic and rosemary) and served with abundant grated Parmigiano Reggiano cheese.
