CIACCIO or CIACCI is a particular type of bread that used to be cooked by poor farmers from the mountains. It looks like a “focaccia” or “piadina” and it is prepared either with white flour (salted ciaccio) or with chestnut flour (sweet ciaccio). Ciaccio is cooked with two special iron tools called "cottole” placed on a stove, lightly greased and then heated. When the liquid dough is poured, skilful manoeuvres with cooking tools are necessary in order to obtain a perfectly cooked ciaccio. Salted ciaccio is usually filled with lard or minced bacon with rosemary and garlic, or with sliced cure meats and cheese. The sweet version is served with ricotta cheese or honey.
