Borlengo or Borlenghi

BORLENGO or BORLENGHI refers to a traditional, basic recipe from local Apennines. Borlengo looks like a thin and extremely crispy crêpe prepared from a very liquid dough made with flour, water, salt and, sometimes, eggs. Borlengo is cooked inside special pans, called “soli” on special, traditional stoves, called "fuochi” that uniformly spread the heat underneath the pan. Borlengo is usually filled with “cunza”, a tasty mix prepared with minced bacon or lard.
